CORIANDER RICE


If you are a vegetarian, then undoubtedly you are going to like this colorful and flavorful Indian coriander rice recipe. You can take it in your lunch box to have a great and delightful diet.

INGREDIENTS

FOR CORIANDER PASTE:
  • Coriander or cilantro – ¾ cup, packed
  • Green chili – 2 small sized
  • Ginger – ½ inch sized piece
  • Garlic – 2 cloves
  • Water – 2 tbsp
  • For Coriander Rice Recipe:
  • Basmati Rice – ¾ cup
  • Oil – 2tbsp
  • Cloves – 2
  • Green cardamom – 2
  • Bay leaf – 1
  • Onion – ¼ cup sliced
  • Cinnamon stick – ½ inch piece
  • Potato – ½ cup cubed
  • Cauliflower – ½ cup cut into bite sized florets
  • Green peas – ¼ cup
  • Carrots – ¼ cup chopped
  • Salt according to your taste sense
  • Water – 1 ¼ cups
PROCESS

MAKING OF PASTE
  • Prior to cooking, rinse the rice well in cold water.
  • Then souse in adequate water for almost 15 minutes.
  • In the meantime slash all the vegetables and prepare coriander paste.
  • Now in a grinder jar take all the paste components with 2 tbsp of water.
  • Compose smooth paste out and put It aside.
MAKING OF CORIANDER RICE RECIPE:
  • In a pressure cooker heat the oil in mild temperature.
  • After that in the hot oil having rice add cloves, cardamom, bay leaf and cinnamon stick. 
  • Let it brown for a minute.
  • Thereafter include some sliced onion and let it cook for about 2 minutes.
  • Now add the remaining vegetables with added salt and combine well.
  • Add prepared paste and stir well almost for 2 minutes.
  • Add wet rice and water and mix them.
  • Cover up the pressure cooker in high heat and let it whistle for twice and finally turn off the stove.
  • Ultimately the recipe is prepared to get served.

PREPARATION TIME – 20 MINUTES
COOKING TIME – 15 MINUTES
SERVE FOR – 2 PERSONS
