CORIANDER RICE


If you are a vegetarian, then undoubtedly you are going to like this colorful and flavorful Indian coriander rice recipe. You can take it in your lunch box to have a great and delightful diet.

INGREDIENTS
===========
FOR CORIANDER PASTE:
  • Coriander or cilantro – ¾ cup, packed
  • Green chili – 2 small sized
  • Ginger – ½ inch sized piece
  • Garlic – 2 cloves
  • Water – 2 tbsp
  • For Coriander Rice Recipe:
  • Basmati Rice – ¾ cup
  • Oil – 2tbsp
  • Cloves – 2
  • Green cardamom – 2
  • Bay leaf – 1
  • Onion – ¼ cup sliced
  • Cinnamon stick – ½ inch piece
  • Potato – ½ cup cubed
  • Cauliflower – ½ cup cut into bite sized florets
  • Green peas – ¼ cup
  • Carrots – ¼ cup chopped
  • Salt according to your taste sense
  • Water – 1 ¼ cups
PROCESS
=======

MAKING OF PASTE
  • Prior to cooking, rinse the rice well in cold water.
  • Then souse in adequate water for almost 15 minutes.
  • In the meantime slash all the vegetables and prepare coriander paste.
  • Now in a grinder jar take all the paste components with 2 tbsp of water.
  • Compose smooth paste out and put It aside.
MAKING OF CORIANDER RICE RECIPE:
  • In a pressure cooker heat the oil in mild temperature.
  • After that in the hot oil having rice add cloves, cardamom, bay leaf and cinnamon stick. 
  • Let it brown for a minute.
  • Thereafter include some sliced onion and let it cook for about 2 minutes.
  • Now add the remaining vegetables with added salt and combine well.
  • Add prepared paste and stir well almost for 2 minutes.
  • Add wet rice and water and mix them.
  • Cover up the pressure cooker in high heat and let it whistle for twice and finally turn off the stove.
  • Ultimately the recipe is prepared to get served.
CORIANDER RICE

PREPARATION TIME – 20 MINUTES
COOKING TIME – 15 MINUTES
SERVE FOR – 2 PERSONS

COCONUT RICE


Tasty coconut creamy rice is very popular in southern states of India. Learn to make coconut rice in micro wave oven in 15 minutes.

INGREDIENTS
===========
  • 80 % cooked Basmati rice – 3 large cups
  • Grated coconut – 1 small cup
  • Readymade coconut milk – 1 large cup
  • Salt to taste
INGREDIENTS FOR TEMPERING
=========================
  • Curry leaves – few
  • Mustard seeds - ½ tsp
  • Fenugreek seeds – ½ tsp
  • Green chili – 3 to 5
  • Peanut – 3 tbsp
  • Asparagus – 1 pinch
  • Boiled chick pea – ½ cup
  • Ghee or refine oil – 2 tbsp
PROCESS
=======
  • Take an oven bowl, add ghee or oil and run the microwave oven for few seconds to warm it
  • Add all ingredients of tempering
  • Run oven for 10 seconds
  • Add grated coconut and run the machine for 5 minutes
  • Add rice and coconut milk, seasoning with salt
  •  Run oven for 10 minutes in high
  • Serve rice with curry

SOYA CHUNK PULAO


This dish is healthy and one pot preparation. I am using soya chunks which are a great source of protein and nutrition. I am making it in microwave oven but traditionally this dish is prepared in hundi in Cole burn oven.  
INGREDIENTS
===========

  • Soya chunk – 50 gm (boiled in water and drained out the water)
  • Basmati rice – 2 large cup full ( washed and socked for at least 1 hour)
  • Red onion  - 3 medium size, 2 cut very finely and 1 for paste
  • Garlic paste – 1 tbsp
  • Red chili powder – 1 tsp
  • Garam masala powder – 2 tbsp
  • Bay leaves – 2
  • Deshi ghee or refine oil – 4 tbsp
  • Clove – 3
  • Cinnamon stick – 1
  • Green cardamom – 3 or 4
  • Salt to taste
  • Mitha ator (essence) few drops
PROCESS
=======

  • In an oven proof bowl, heat ghee  and put soya chunk and salt
  • Cook for 5 minutes in high
  • Add bay leaves, clove, cinnamon and cardamoms
  • Cook for 10 seconds, a nice aroma of spices will come out
  • Add onions chopped and cook in high for 2 minutes
  • Add onion paste ,garlic paste and red chili powder, cook 3 minutes
  • Add rice and mix well now add 3 and ½ large cups water, you can add salt if required , traditionally 2 tbsp sugar is added to make the dish little sweet but you can avoid sugar
  • Run the oven for 10 to 15 minutes or until rice cooked and water evaporate
  • Add garam masala powder and essence
  • Remove from oven and cover for 10 minutes so the aroma of essence goes in the dish
  • Colour of the dish will be whitish but you can use kesore food colour to make the dish orange yellow in colour
  • In case of using colour ,apply ½ tsp colour to be added to water you added to cook the rice

TAMARIND RICE WITH RAITA


This is a south Indian rice recipe, prepared with tamarind used in Indian cuisine mostly. Fine aromas of some Indian spices give it a flavorful and delicious taste. Try it at home and surly make raita to serve with it. Raita is also a popular side dish. It has the goodness of curd. This rice dish is enriched with vitamin C.
INGREDIENTS
===========
  • Fine grain rice – 500 gm
  • Tamarind Pulp – 1 large cup
  • Sesame seeds – 2 tbsp
  • Coriander seeds - 2 tsp
  • Whole dry red chili – 5
  • Channa dal (gram) – ½ cup
  • Peanut  - 25 gm
  • Curry leaves – 2 tbsp
  • Turmeric powder – 1 tbsp
  • Salt to taste
  • Sesame oil – 4 tbsp
INGREDIENTS FOR TAMPERING
========================
  • Mustard seeds – 1 tbsp
  • Fenugreek seeds – 1 tsp
  • Curry leaves – 2 tbsp
  • Dry red chili – 3 or 4
PROCESS
=======
  • Sock rice for half an hour, cook it little hard and  keep aside
  • Dry roast coriander seeds and red chili, grind to make powder
  • Dry roast sesame seeds and grind
  • In a frying pan heat 2 tbsp sesame oil
  • Add all the ingredients of tampering
  • When crackling sound of mustard comes out add gram and peanuts
  • Cook for few minutes
  • Add salt and tamarind pulp with little water
  • Mix well and simmer the gas
  • Cook for 5 to 10 minutes
  • In an another frying heat rest of oil
  • Add rice and salt mix well
  • Sprinkle powdered spice and pour the gram mixture
  • Mix well and cook for 5 minutes 
TAMARIND RICE

INGREDIENTS FOR RAITA
====================
  • Sour curd – 100 gm
  • Chopped cucumber – 5 tbsp
  • Pani puri masala – 1 tbsp
  • Red chili powder – 1 tsp
  • Salt to taste
  • Sugar - 3 tsp
PROCESS OF RAITA
===============
  • Beat curd with salt and sugar
  • Mix salt with cucumber and keep for 10 t0 15 minutes
  • Water will comes out from cucumber
  • Squeeze to remove water
  • Add cucumber, pani puri masala and red chili powder
  • Mix well, your Raita is ready to serve
  • Serve the rice with Raita
RAITA


PREPARATION TIME - 10 MINUTES
COOKING TIME - 12 MINUTES
SERVE FOR - 4
