FISH CURRY MASALA


Indian style fish curry is tasty and mouthwatering. This recipe can be prepared with any kind of fish but king fish will be most suitable for this preparation. I am using tomato puree for the gravy, but you can use yogurt to enrich the gravy. 

INGREDIENTS

  • King fish pieces each 50 gm – 8
  • Onion paste – 2 tsp
  • Ginger paste – 1 tsp
  • For dry roast –( cumin seeds – ½ tsp, coriander seeds -1/2 tsp, whole dry red chili – 4, fennel seeds – ½ tsp)
  • Tomato puree or yogurt – ½ cup
  • Turmeric powder – 1 tbsp
  • Salt to taste
  • Mustard oil – ½ cup
  • Coriander leaves chopped for garnishing

PROCESS

  • Clean the fish pieces and rub salt and turmeric powder on the pieces
  • Heat oil in a frying pan, fry fish pieces 
  • Remove the pieces and add onion & ginger paste in the rest of the oil
  • Stir and add other spices such as salt and turmeric
  • Blend the dry roasted spices to get a fine powdered masala
  • Combine with other spices in the pan
  • When the spices cooked and oil starts to leave the pan, add tomato puree and stir
  • Add 1 large cup water and bring to boil
  • Add fish pieces, cover the pan, cook for 5 minutes
  • Remove from fire, garnish with coriander leaves

COOKING TIME – 20 MINUTES
SERVE FOR – 4

MACHHI KA SALAN


It is an Indian style fish curry recipe; you can use any of your favorite fishes in this recipe. This curry can be cooked with any fish. There is lots of variation in this recipe but I am presenting the easy way of cooking fish curry. 
INGREDIENTS
===========
  • King fish pieces - each 50 gm (8 pieces)
  • Onion paste- 3 tbsp
  • Ginger paste – 1 tbsp
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tbsp
  • Red chili powder – 1 tsp
  • Yogurt – 1 small cup
  • Coriander leaves for garnishing
  • Salt to taste
  • Mustard oil – 5 tbsp  
PROCESS
=======
  • Marinate fish pieces with salt and yogurt for at least 1 hour
  • Mix all powdered seasoning with ½ cup water
  • Now heat oil in a cooking pan and add onion paste
  • Cook until oil separates, add ginger paste and powdered spices mixture
  • Spices will take 5 minutes to cook
  • Add 1 large cup water and marinated fish with marinating juice
  • Cook 5 to 7 minutes, fish pieces will be tender
  • Garnish with coriander leaves

COOKING TIME – 15 MINUTES
SERVE FOR – 4

AMRITSARI FISH


Amritsari fish belongs to the popular Punjabi cuisine. This delicious Amritsar street food is made with crispy batter fried fish. It is served as a starter in restaurants. Fish fillets are marinated in spices and then fried deeply.

INGREDIENTS
===========
  • Fish fillets - 8
  • Gram flour - 200 gm
  • Garlic paste - 1 tbsp
  • Ginger paste - 1 tbsp
  • Carom seeds (ajwain) - 1 tsp
  • Red chili powder - 1 tbsp
  • Lemon juice - 1 tbsp
  • Beaten eggs – 2
  • Sour curd – 2 tbsp (beaten)
  • Oil for deep-frying
  • Salt to taste
PROCESS
=======
  • Clean fish fillets and marinate with ginger & garlic paste, chili powder, lemon juice and salt for 15 minutes
  • In a bowl combine gram flour, carom seeds, egg , beaten curd, water and salt
  • Marinate fish fillets and place all in an oven proof plate 
  • Apply little bit of oil and keep in microwave oven for 5 minutes in high
  • Turn and again add oil and keep for 3 to 4 minutes
  • Sprinkle chaat masala, lemon wedges. Serve hot.
