There are lots of variations in mutton recipes and roast mutton recipe is one of them. Cooked mutton is required for preparing this dish. This little spicy and hot mutton dish should be liked by meat lovers.

- Mutton pieces – 500 gm
- Ginger & garlic paste – 4 tbsp
- Red chili powder – 2 tbsp
- Beaten sour curd – 1 cup
- Cumin powder – 1 tsp
- Turmeric powder - 1 tsp
- Garam masala powder – 1 tbsp
- Desi ghee – 4 tbsp
- Salt to taste
- Bay leaves – 2
- Green cardamom - 4
PROCESS

- Put mutton pieces in presser cooker with 1 cup water, bay leaves and cardamoms
- Wait for 4 to 5 whistles, drain out the juice and keep aside, separate mutton pieces
- Melt ghee on a pan
- Add ginger & garlic paste with other spices and salt
- Put mutton pieces, cooking juice and curd, simmer for 20 minutes
- When oil starts to separates from pan, remove from heat
- Garnish with coriander leaves
